Spinach & Artichoke Dip Panini

2 Ciabatta Rolls
4 Tbspns Softened Cream Cheese
1/2 Cup Drained & diced small Marinated Artichoke Hearts
1/2 Cup Fresh Spinach leaves
1/4 Cup Thinly Minced Red Onion Shredded Parmesan Oil or Ghee
METHOD:
1. Preheat Panini Grill to high.
2. Cut the rolls horizontally in half, leaving one end intact & brush both the sides with oil or melted butter.
3. On the bottom half spread Cream cheese, then layer with Artichokes, Spinach, Red Onion & Parmesan. Cover with top half & press gently to pack.
4. Place Sandwich on grill, close the grill lid and cook 3-4 min until golden brown. Serve Immediately.
TIPS:
If you do not have a Panini press, prepare as above and put on Griddle or Pan. Wrap a Brick with foil and put on the rolls to press and cook 3 min on each side. Yields Two. Make it a meal by serving with Soup and Salad on the side.
